This Month, I’ve been trying my best to get as much protein and fiber as possible into my diet plan. As someone recently returning to the gym, I find settling on a balanced meal challenging. Inspired by the Italian classic recipe, I was looking for a new meal to add to my diet to increase my choices and variety of fresh flavors. So, it’s the best time to share the vitello tonnato recipe, which I’ve learned at my university as a hospitality food and beverage student.

This cold meat starter is a classic Italian recipe, usually served on special occasions. The idea consists of finely cooked or roasted meat accompanied by a sauce with tuna and anchovies. A peculiar but surprising combination.

VITELLO TONNATO INGREDIENTS

The round veal shoulder is a tender, lean, and versatile cut perfect for flavorful and nutritious meals.

Vegetable carrots , onion , celery stick , garlic cloves , cloves.

Salt and black pepper are the essential seasonings for our recipe.

Extra virgin olive oil (laurel, rosemary) obtained from the first cold pressing of olives using only mechanical methods without the use of heat or chemicals for conservation.

White wine enhances flavors, adds acidity, and helps balance rich or fatty dishes.

SAUCE VITELLO :

Mayonnaise whisk together egg yolks, mustard, lemon juice, and slowly add oil until it emulsifies into a creamy consistency.

Tuna in oil-drained

Anchovies are small salty fish commonly used in Middle east Mediterranean cuisine and are known for their firm, savory flavor.

Capers are flower buds of the Casper, often pickled and used as a garnish for decoration.

Baking juices, the liquid released during the cooking or roasting process, especially when meats and vegetables are cooked in the oven.

STEP BY STEP INSTRUCTION

Step 1: Season and Sear the Meat

Start by seasoning the ground beef, spreading it with oil, and sealing the meat everywhere. We will do it over high heat in a frying pan until golden brown.

Step 2: Prepare for Baking

We place the sealed meat on a baking sheet and add the wine and the aromatics.

Step 3: Bake the Meat

Now, it is time to bake the meat. The time depends a lot on the size of the piece, but to get the point of the video (with the pink meat in the center), we will give it about 30 minutes per 2.20 Lbs of veal.

  • This piece weighed 2.866 pounds, and I cooked it in a preheated oven at 180°C for 22 minutes.
  • After this time, we will turn it over and bake for another 25 minutes at 160°C.
  • If you like the most cooked meat, leave it for 10-15 minutes per 2.20 Lbs for complete and uniform cooking, even giving it more temperature.

Step 4: Rest and Store

Once baked, let cool and store the cooking juices. When completely cold, wrap it in aluminum foil or film and bring it to the refrigerator.

Step 5: Prepare the Sauce

To prepare the sauce, we combine all the above mentioned ingredients and mash well until we obtain a homogeneous cream.

Step 6: Serving vitello tonnato

Before serving, remove the meat from the fridge and let it season for 30-40 minutes. Cut the slices very thin, as if they were cold cuts. Place on the plate, season abundantly. Decorate with your touch to taste … And enjoy!

Ingredients
  

  • 3.30 lbs Round veal shoulder
  • 1 Onion Halved (unpeeled)
  • 2 Carrots
  • 2 Garlic cloves
  • 3 Whole cloves
  • 1 pinch Salt and black pepper
  • 1 Cup White wine
  • 6 ⅓ Cups Water
  • 2 Tablespoons Olive oil

Sauce vitello

  • 1 cup Mayonnaise
  • 1/2 cup Drained tuna in oil
  • 5 Anchovies
  • Half lemon juice only
  • 2 Tablespoons of baking juices

Instructions
 

  • Seasoning the veal with salt and black pepper.
  • Heat some olive oil in a large pot.
  • Sear the meat on all sides until golden brown.
  • Add the carrots, onion, garlic, and cloves.
  • Pour in the white wine.
  • Let it simmer for a bit until the wine reduces.
  • Add the water.
  • Cover and let it cook on low heat between 45 to 60 minutes , until the veal is tender.
  • Once done, remove the meat and let it cool completely.
  • Strain the cooking juices and set aside about 2 tablespoons for the sauce.
  • Blend the mayonnaise, tuna, anchovies, lemon juice, and reserved cooking juices until smooth.
  • Slice the cooled veal very thin.
  • Arrange the slices on a plate.
  • Generously spoon the sauce over the veal.
  • Let it chill in the fridge for at least an hour before serving.
  • Enjoy your delicious dish!
